What a great summertime side dish to serve with your favorite burger. Once the zucchini and summer squash are in season I make this recipe all the time and just for some added flavor right before I serve it I sprinkle fresh Parmesan cheese over the top and WOW does it ever give it even more flavor!
2 Small Zucchini, julienned
2 Small Yellow Summer Squash, julienned
1 Small Sweet Red Pepper, julienned
1 Small Onion, julienned
2 T. Vegetable Oil
1.5 tsp. Seasoned Salt
1/2 tsp. Pepper
In a large skillet sauté onion in butter until tender. Stir in remaining ingredients. Bring to boil. Reduce heat; simmer covered for 3 minutes or until sauce is slightly thickened, stirring occasionally. Serve with rice if desired.

Gewurztraminer is often an overlooked white wine choice. It is a refreshing and slightly sweet choice for summertime drinking. Serve it slightly chilled to really focus the flavors of passion fruit, apricots and rose petals in the wine.
