St. Patrick’s Day is almost here and while the holiday may be a bigger deal in the U.S. than it is in Ireland, it’s the perfect time to enjoy some delicious traditional Irish food.

Colcannon is a wonderful potato side dish for St. Patrick’s Day. Colcannon is a mix of mashed potatoes, cabbage and leeks. This recipe for Colcannon from Martha Stewart also lets you assemble it a few hours ahead of time and then you just brown it before serving.
