Dishes for National Night Out

National Night Out is August 2 and it’s a great way to get your neighbors together! It’s a perfect time to catch up on what’s happening and enjoy each other’s company with great food. These recipes are quick to put together and taste best in good company.

Sunny Broccoli Pasta Salad is a great starter that goes along great with any other dish, plus you can make it in just 25 minutes! Grilled Double-Cheese and Herb Bread has incredible flavor that will have everyone’s mouths watering. Add your favorite nuts and chips to this Chili and Garlic Chex Mix to get just the flavors you want in a nice alternative to a bowl of chips. Plus: an entire batch is ready in a half hour! Grillside Guacamole is a great spin on original guacamole and the grilled ingredients just taste of summer. For dessert try these S’mores Peanut Butter Bars. They taste incredible and are very simple to make.

Sunny Broccoli Pasta Salad

1    box Betty Crocker Suddenly Salad ranch & bacon pasta salad mix
1    cup mayonnaise
2    tablespoons sugar
2    tablespoons cider vinegar
4    cups small fresh broccoli florets
1/4    cup chopped red onion
1/2    cup raisins
1/2    cup sunflower nuts

Empty pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
Drain pasta; rinse with cold water. Shake to drain well.
In large bowl, stir together seasoning mix, mayonnaise, sugar and vinegar. Stir in pasta, broccoli, onion, raisins and sunflower nuts. Serve immediately, or refrigerate.

Chili and Garlic Chex Mix

Total Time 35 Min
8    cups Rice Chex® cereal (gluten free)
1    bag (3 oz) fat-free butter-flavor microwave popcorn, popped
1/4    cup dry-roasted peanuts
3    tablespoons canola or vegetable oil
1/3    cup grated Parmesan cheese
2    teaspoons chili powder
2    teaspoons garlic powder
Heat oven to 300°F. In very large bowl, mix cereal, popcorn and peanuts. Drizzle with oil; toss until evenly coated.
In small bowl, mix remaining ingredients; sprinkle over cereal mixture. Toss until evenly coated. Spread cereal mixture in ungreased large roasting pan.
Bake uncovered 15 minutes, stirring once. Spread on waxed paper to cool, about 10 minutes. Store in airtight container.

S’mores Peanut Butter Bars
Prep Time 10 Min
Total Time 1 Hr 20 Min
1    pouch (1 lb 1.5 oz) peanut butter cookie mix
Water, vegetable oil and egg called for in cookie mix directions
1    container  chocolate frosting
2    cups miniature marshmallows
2    cups Golden Grahams® cereal
Heat oven to 350°F. Make cookie dough as directed on pouch. Press dough into ungreased 13×9-inch pan.
Bake 16 to 18 minutes or until golden brown around edges.
Spoon frosting into microwavable bowl. Microwave uncovered on High 15 to 20 seconds; stir frosting until smooth. Reserve 1/4 cup. Pour remaining frosting over warm bars. Sprinkle marshmallows and cereal over frosting.
Bake 3 to 5 minutes longer or until marshmallows are puffed. Cool 15 minutes. Drizzle reserved frosting over bars. Cool completely, about 30 minutes. For bars, cut into 6 rows by 4 rows.
